Hiking snack: Easy no-bake cereal bars

If you're looking for a hiking snack that's both delicious and easy to make, these no-bake cereal bars are perfect. Ideal for road trips or giving you an energy boost during outdoor adventures, you can whip them up at home or in your camper van with ease. They're so tasty, they won't last long!

Ingredients

Makes 14 bars

  • 250g Pitted dates

  • 75g Caster sugar

  • 120g Butter

  • 120g Rice Krispies

  • Chocolate chips for sprinkling on top (optional)

Method

  1. Prepare the tray: Line a baking tray with non-stick baking paper and set aside.

  2. Mix ingredients: Chop the dates into small pieces (you can also buy pre chopped in a block from Holland & Barrett). Add the dates, sugar and butter to a large pan and stir continuously over low-medium heat. Once the dates soften and the mixture combines, bring the mixture to a simmer, then remove from heat.

  3. Combine and set: Stir in the Rice Krispies and make sure they are fully coated in the mixture. Transfer to the lined tray and use a metal spoon to press it flat into the tray.

  4. Add chocolate (optional): While the mixture is still warm, sprinkle some chocolate chips on top so the bottoms just about melt and stick to the bars.

  5. Cool and serve: Allow the mixture to cool and set before slicing into bars.
